Hey there! The restaurant I want to tell you about is called Wolfgat. It got its name from the Wolfgat cave, a really fascinating spot that holds clues about an ancient society and maybe even secret underground tunnels! My friend Kobus says that this place is so amazing because there’s a long history of early civilization along this coastline that really inspired him.
“At Wolfgat, we create our menus in a very natural way,” he tells me. “We draw inspiration from the stunning West Coast environment, which undergoes incredible seasonal changes and is home to a one-of-a-kind Fynbos plant kingdom. Our dishes are influenced by the weather and the time of year, guided by what we discover during our daily explorations along the coastline.” It’s an unbeatable approach!
Finding ingredients close to home
Kobus has created a one-of-a-kind culinary style known as hyperlocal Strandveld cuisine. He takes ingredients that many people have never tried before, like native succulents and herbs, and presents them in their purest form. The kitchen at his restaurant is intentionally non-industrial, allowing the unique flavors of the ingredients to shine.
Kobus’s respect for the ingredients and where they come from, combined with his creativity and expertise, is evident in the summer 2018/19 menu. He and his team have decided to revisit some of the recipes from their cookbook, Strandveld Food, which was written five years ago. However, they are giving these recipes a fresh twist and presenting them in a new and exciting way.
