Let’s try some barrel-aged vinegar
I discovered an interesting story about Rozendal, a former wine farm, and their journey into making vinegar. It all started with a batch of wine that had turned too sour. Instead of throwing it away, they decided to let it age for a decade and see what happens. To their surprise, it transformed into a remarkable balsamic-style vinegar made from a combination of merlot and cabernet sauvignon, known as a Bordeaux blend.
But that’s not all. Rozendal didn’t stop there. They also added herbal infusions to their range of vinegars. They have fynbos, hibiscus with elderflower and vanilla bean, green tea with carob, chilli, and kelp, and lavender. If you visit their charming vinaigrier, which is like a wine cellar but filled with oak barrels, you can taste all of these flavors.
What surprised me the most is that these vinegars are not just for cooking. You can actually sip them like aperitifs or mix them with herbal tea for a refreshing drink. Of course, they also have countless culinary uses, but isn’t it fascinating to know that vinegar can be enjoyed on its own?
If you’re curious about trying out these unique vinegars, you’ll be glad to hear that the farm eatery called Good to Gather incorporates them into their delicious menu. It’s an excellent opportunity to experience the versatility of Rozendal’s vinegars.
