A Fresh Perspective on Hospitality
Let me tell you about Christiaan, the renowned executive chef who made a name for himself by prioritizing ethical and sustainable ingredient sourcing during his time at Delaire Graff (2009 to 2014) and Boschendal (2014 to 2019). One of his remarkable achievements was creating the stunning organic vegetable gardens that supply The Werf restaurant at Boschendal.
But when Covid came crashing in, Christiaan saw an opportunity to explore a new path. He immersed himself in the world of regenerative farming and began examining how those principles could be applied to hospitality and people management. This journey ultimately led him and his wife to establish Living Exchanges, a consultancy dedicated to revolutionizing the industry.
I became acquainted with McGregor in my role as a consultant, joining forces with Billy after the unfortunate passing of his partner, Michael Pettit, who had been overseeing the venues and food outlets. Michael and I had crossed paths back in the 90s during our time in the hospitality industry. McGregor held a special place in my heart because I had tied the knot here 26 years ago, and my family had resided in this charming town until recently. So when Billy unexpectedly reached out to me for some fresh ideas, I felt compelled to lend a hand in finding a chef and brainstorming restaurant concepts.
Little did I know that those initial visits would captivate me entirely. Something about McGregor cast a spell on me, and I found myself compelled to become fully immersed in the project. It was clear to me that I needed to relocate to McGregor and take charge of overseeing the entire hospitality sector, including Tebaldi’s and the laid-back Out of Africa café.
“Basically, what I’m doing is bringing in sustainable and regenerative practices to how we source our ingredients, how we manage our staff, and creating a menu and atmosphere that makes people feel nurtured, cared for, and nourished. That’s what we’re really focused on here.”

I like to think of it as a modern take on country cooking, where I carefully curate the menu based on the local ingredients that surround me. You see, I believe in using what’s closest and freshest to create a truly unique dining experience.”
This philosophy extends to our menu, which is thoughtfully crafted with hand-picked ingredients. We source our salad greens and herbs from a permaculture project right here in the village, ensuring that each leaf is bursting with flavor and sustainability. Our eggs and chickens come from a nearby farm, where they roam freely and are treated with utmost care. As for our pork, it comes from Swellendam, where the animals enjoy a free-range lifestyle that translates into remarkable taste. And let’s not forget about our cheese and dairy, which hail from Ashton, brimming with the goodness of the local land.
