“I’ve mixed together the elements of cuisines that I enjoy,” I say. “Bratwurst on its own doesn’t do it for me, so I decided to switch it up by putting it in a roti and serving it with kimchi.” The result is absolutely delicious, even though I’m not usually a fan of sausage. And to avoid any confusion, I’ve made a conscious effort not to use the word ‘tapas’ because it typically refers to Spanish small plates.
