Here, Chef Charlton Prins dazzles diners with his delightful and approachable culinary creations, fusing French cuisine with a unique South African flair. What’s more, the menu is regularly updated to reflect the changing seasons, ensuring a fresh and exciting dining experience every time you visit.
Experience Our Revitalizing Spring Menu
When I think about getting together with my loved ones around a table, the joy of life, the stories we share, and the amazing food and wine we indulge in all come to mind. This philosophy is at the heart of the Von Arnim family, and their spring menu beautifully reflects this celebration of life.
Let’s start with the appetizers. How does chargrilled octopus with pickled eggplant and chorizo sound? It’s a tantalizing combination of flavors that will surely leave you wanting more. Or perhaps you prefer burrata with spiced beetroot, rocket, and lavash. The creamy burrata paired with the bold spices of the beetroot creates a delightful harmony. And for a unique twist, try the ratafia-glazed quail with celeriac cream and mushrooms à la grecque. The glaze adds a touch of sweetness to the savory dish, creating a delightful balance.
Now, let’s move on to the main courses. If you’re a fan of vegetarian cuisine, you’ll love the sweet potato and ricotta gnocchi with Parmesan and goat’s cheese sauce. It’s comfort food at its finest, with the creamy sauce perfectly complementing the soft gnocchi. For meat lovers, the slow-cooked lamb shoulder with confit celeriac and lamb mint jus is a must-try. The tender lamb, combined with the rich flavors of the celeriac and mint jus, will transport you to culinary heaven. And finally, we have the pan-fried trout with steamed asparagus, peas, fennel, trout eggs, and a smoked thyme and lemon velouté. This dish embodies the freshness and vibrancy of spring, with the trout taking center stage.
I highly recommend ending your meal with a delightful raspberry tart, a comforting bread and butter pudding with a touch of naartjie-infused crème anglaise, or a luxurious roasted marshmallow ice cream paired with rich dark chocolate mousse and blondie.

Spring is the ideal time to enjoy some sparkling wine, and Haute Cabrière is famous for their exceptional Pierre Jourdan cap classique. However, I suggest exploring their range of reserve wines, which are all available by the glass. You won’t be disappointed!
When it comes to the cost, you have two options: R375 for a two-course meal or R465 for a three-course feast. Haute Cabrière is open on Thursday to Saturday from 12pm to 3.30pm, on Sunday from 10am to 3pm, and on Monday from 12pm to 3.30pm.
